Phil Thompson

In 2005 Brocket Hall announced the appointment of Phil Thompson, Executive Chef of its flagship fine dining restaurant Auberge du Lac. Phil joined Auberge du Lac in 2001 and has provided an outstanding contribution to the success of the restaurant following engagements at leading London venues including L'Escargot, the Lanesborough and St. Martins Hotels. In 2007 Phil was appointed Executive Chef for the Brocket Hall Estate and is responsible for the cuisine at Auberge du Lac, Brocket Hall and the Whatershyppes Restaurant at the Golf Club.

Phil is 100 percent hands-on, combining the best traditions of French cooking with his own essentially English background. His success with Auberge du Lac is such that his responsibilities now include the famous Brocket Hall, where he oversees menus for their prestigious clientele.

Recently, Phil and Auberge du Lac have been nominated as ‘Rising Stars' in the 2008 Michelin Guide.
